    Eggs in Purgatory is yet another breakfast we love. I whipped up a pan of these this weekend, and they definitely sufficed the morning hunger. The best part of making these for breakfast is that you likely have all the ingredients already in your pantry and refrigerator. If you don’t have the exact ingredients I am sure you have something that can suffice. It’s all about working with what you have. This recipe is the perfect way to spice up your eggs.     I crave vegetables and fruits everyday most all day. Don’t get me wrong I do crave other things, but there is something about eating clean and healthy that makes me feel so good. It gives me energy and does not drag me down. Monday’s tend to be salad days at our house, as over the weekend we let ourselves indulge in some of the not so healthy food loves.     All the yum here again today. We had this delicious Sun Dried Tomato Gnocchi the other night and boy it hit the spot. It literally took me no more than a half hour to prep and cook. Meaning it’s the perfect meal for during the week or even weekend when your life/ schedule have you going like crazy or when you are just feeling the need to relax but still need to get something for dinner made.     Pepper Nachos

    My cravings for potato chips and tortilla chips never seem to go away. In an effort to not give into a “cheat” meal I made these pepper nachos. Boy oh boy were they delicious, and I didn’t feel guilty that I was eating horribly. I used a combination of different colored peppers with mine as I like a colorful plate, but use whatever color peppers are your favorite. Toppings I didn’t add a boat load of toppings to mine.     All throughout the summer I have been watching numerous friends and bloggers have all sorts of seafood boils, and I have been extremely jealous.
