Basil Peach Salad with Spicy Italian Chicken Sausage

Another summer delight for you to make tonight. Like that rhyme there? This Basil Peach Salad is extremely easy to whip up during the week, and I promise it’s delicious.  It had my mouth watering making it and didn’t disappoint when it was done.

We used an olive oil and white wine vinegar drizzle for the dressing with the salad. Some nights I just like the easy basics and they seem to never disappoint. If you aren’t an olive oil vinegar dressing type of person feel free to jazz up the salad with whatever dressing your heart desires. Also, if you don’t much like Spicy Italian Chicken Sausages, don’t use them. I found they paired best with this combination, but feel free to use whatever sausage floats your palate boat.

Basil Peach Salad w/ Spicy Italian Chicken Sausage

Ingredients

  • 4 Spicy Italian Chicken Sausages
  • 1 head Romaine Lettuce Washed and Chopped
  • 1 container Mozarella Pearls
  • 4 Peaches Sliced
  • 1 Cup Basil Diced
  • 2 Avocados Sliced
  • 1 Cup Slivered Almonds
  • 1 Tbsp Olive Oil
  • Olive Oil & White Wine Vinegar (Dressing)
  • Salt & Pepper (To Taste)

Instructions

  1. Grill chicken sausages. Slice and set aside. 

  2. Place chopped romaine lettuce on 4 plates. 

  3. Place slivered almonds in a fry pan with 1 Tbsp of oil on low heat. Brown until desired. 

  4. Place mozzarella pearls, sausage, almonds, avocado and peaches on salad in a wedge style fashion. 

  5. Sprinkle salad with the fresh basil. 

  6. Grind some fresh pepper and salt to taste and drizzle with olive oil and white wine vinegar. 

  7. Enjoy!
