Eggs in Purgatory
Eggs in Purgatory is yet another breakfast we love. I whipped up a pan of these this weekend, and they definitely sufficed the morning hunger. The best part of making these for breakfast is that you likely have all the ingredients already in your pantry and refrigerator. If you don’t have the exact ingredients I am sure you have something that can suffice. It’s all about working with what you have.
This recipe is the perfect way to spice up your eggs. We place the egg and sauce mixture on top of a piece of toast, but you can do as you please. Other options you could use:
- Bagel
- Hashbrowns
- Cheese and potato waffle
Eggs in Purgatory
Ingredients
- 1 Jar Red Sauce (Favorite brand)
- 4 Eggs
- 4 pieces Bacon
- 1/4 Red Onion Diced
- 3 Cloves Garlic Minced
- 2 Mini Peppers Sliced
- 15 Grape Tomatoes Halved
- 1/2 Cup Parmesan Cheese
- 1/2 Tsp Dried Oregano
- 1/2 Tsp Onion Powder
- 1 Tsp Salt
- 1 Tsp Peper
- 1 Tsp Red Pepper Flakes
- 1 Tsp Worcestershire Sauce
- 10 Sprigs Parsley
Instructions

Cook bacon and cut into small size pieces. Set aside.

Brown diced onions and minced garlic with some olive oil in a medium fry pan.

Add in jar of red sauce sliced peppers, all spices and Worcestershire sauce. Stir and let heat through until bubbling on top.

Make 4 pockets in the red sauce and crack the eggs into the pockets.

Sprinkle the tomatoes in.

Place a cover on the fry pan and let the eggs cook for a few minutes until the eggs are no longer translucent.

Top with cheese and cover again until chese is melted.

Remove from heat and top with crumbled bacon and parsley.
