Sun Dried Tomato Gnocchi

All the yum here again today. We had this delicious Sun Dried Tomato Gnocchi the other night and boy it hit the spot. It literally took me no more than a half hour to prep and cook. Meaning it’s the perfect meal for during the week or even weekend when your life/ schedule have you going like crazy or when you are just feeling the need to relax but still need to get something for dinner made.

I kept our Sun Dried Tomato Gnocchi very simple and didn’t add many veggies, however if you want more veggies, definitely feel free to add them in. Ideas for additional vegetables to add in:

  • Broccoli
  • Peppers
  • Snap Peas

I am also including instructions for both a vegetarian version (minus the sausage) and a meat option (including the sausage). This way it’s sure to please everyone’s pallet.

Ingredients

  • 4 Chicken Sausages Your Favorite Flavor (If making vegetarian exclude)
  • 1 Pkg Gnocchi
  • 2-3 Cups Arugula
  • 1 Cup Sun-Dried Tomatoes Diced
  • 1/4 Onion Diced
  • 2 Tbsp Olive Oil
  • 1/4-1/2 Cup White Wine Vinegar
  • Garlic Salt
  • Lemon Pepper
  • 1/2 Cup Shredded Parmesan

Instructions

  1. Preheat oven to 375°

  2. Place sausage in oven and bake for 20-25 minutes. Sausage is done when it has reached 165° Farenheit. You can also grill the sausage.  Slice sausage when cooked through. 

  3. While sausage is cooking place diced onion in a fry pan with olive oil and brown for 5 minutes or so. 

  4. While onions are browning dice sun dried tomatoes. 

  5. Add sun dried tomatoes into the fry pan once onions are browned. Season with lemon pepper and garlic salt. Cook for an addition 3-5 minutes. 

  6. Next, add in gnocchi and white wine vinegar. Cover and simmer on low for 5 minutes. This will help cook the gnocchi. 

  7. Take the cover off and cook for another 5 minutes browning up the cooked gnocchi. 

  8. Add in arugula and stir until wilted. 

  9. Plate (4 plates) and top with cooked sliced chicken sausage. 

  10. Top with shredded parmesan and enjoy.
