    Summer is here and with that comes the heat. I am personally not a big fan of the heat. Fall is definitely more my jam, but here we are. Trying not to heat up the house and still eat dinner.     Dreaming of cooler weather. Yes, I am that person who doesn’t love Summer. I do love the flowers and having a garden and NOT having to shovel snow, but the heat.     Boy oh boy it’s been hot in Colorado, so much so it’s nice (despite the air conditioning) to make dinner on the grill.     What a weekend it has been. A weekend filled with more bliss than the heart can take in. Friday night BBQ, concert date with my husband and I actually watched a movie from start to finish for the first time in months. It felt great.     My cravings for potato chips and tortilla chips never seem to go away. In an effort to not give into a “cheat” meal I made these pepper nachos. Boy oh boy were they delicious, and I didn’t feel guilty that I was eating horribly. I used a combination of different colored peppers with mine as I like a colorful plate, but use whatever color peppers are your favorite. Toppings I didn’t add a boat load of toppings to mine.     Happy Taco Tuesday! Looking to switch up your normal taco Tuesday routine? This Citrus Bean Salad and Taco Quesadillas are the perfect way switch it up and add that spice to your Tuesday night.
