Grilled Chicken Gyros

I have absolutely loved being able to grill out out every night. Last nights dinner from the grill was, grilled chicken gyros. What better way to end the weekend than to relax on the patio and grill dinner with my husband and pup of course, because he is included in everything. Love our family time.

This recipe is also the perfect Sunday dinner as it’s super easy and healthy. After a long weekend of working on house stuff, celebrating a good friend and a Saturday night dinner party, an easy dinner was needed tonight. An easy and healthy dinner I should say. What you put into your body is what you are going to get out of it. That being said, I needed a good healthy meal to ensure my Monday would be as productive as it could be.

We paired these grilled chicken gyros with homemade fries topped with feta cheese, however if that is too unhealthy for you, you could do grilled veggies.

Ingredients

Chicken & Marinade

  • 2 Chicken Breasts Sliced in Medium Strips
  • 3/4 Cup Greek Yogurt
  • 1/2 Cup Fresh Lemon Juice (I squeezed roughly 2 lemons to get 1/2 cup)
  • 4 Cloves Garlic Minced
  • 6 Sprigs Fresh Dill

Toppings

  • 1/4 Cup Pepperonicini’s Sliced
  • 1/2 Cup Cherry Tomatoes Halved
  • 1/2 Cup Arugula
  • 1/4 Cup Kalamata Olives Halved
  • 1/2 Cucumber Sliced & quartered (slices)
  • 1/4 Red Onion Sliced (halves)

Feta Fries

  • 2 large Russet Potatoes
  • 2 Tbsp Olive Oil
  • 1/2 Cup Feta Cheese Finely Crumbled
  • 1/2 Tsp Dried Mint
  • Garlic Salt
  • Fresh Cracked Pepper

Tzatziki Sauce

  • 1 Cup Greek Yogurt
  • 1/2 Cup Cucumber Minced
  • 2 Cloves Garlic Minced
  • 1/4 Cup Fresh Dill Chopped
  • 2 Tsp Lemon Juice
  • 1/2 Tsp Mint
  • Salt & Pepper To Taste

Misc

  • 4 pieces Naan
  • 1 Tsp Dried Mint
  • 1/2 Cup Feta Cheese Crumbled

Instructions

Marinating Chicken

  1. Place medium chicken strips, greek yogurt, fresh squeezed lemon juice, minced garlic and dill sprigs in a gallon zip lock bag. 

  2. Seal zip lock bag and mix around until ingredients thoroughly combined and chicken is coated. Place in refrigerator and marinate for 8 hours. 

Feta Fries

  1. Preheat oven to 425°. 

  2. Wash russet potatoes and slice into french fri like pieces. Place in a large bowl. 

  3. Add olive oil in and mix thoroughly. Place on a cookie sheet.  

  4. Sprinkle with garlic salt, dried mint and fresh cracked pepper. 

  5. Bake for 30 minutes or until browned to desire. 

  6. Top with finely crumbled feta cheese. Serve with Grilled Chicken Gyros. 

Tzatkiki Sauce

  1. Add all ingredients listed above under Tazatkiki sauce and mix throughly. Place in the refrigerator until everything else is ready. 

Grilled Chicken

  1. Turn on grill and get nice and hot. 

  2. Take chicken out of marinade and place on platter. Sprinkle with dried mint. 

  3. Place chicken on grill and grill until they reach 165° Fahrenheit. 

Gyro Assembly

  1. After chicken is done. Briefly place Naan on the grill and let char a little on each side. Remove. 

  2. Slice chicken strips to desired size. 

  3. Place 1 piece of naan on 4 plates. Top with sliced grilled chicken and feta cheese. 

  4. Place desired topping on top and drizzle with Tezatkiki Sauce. 

  5. Enjoy with feta fries!
