BBQ Chicken & Sweet Potato Bowls
You are probably wondering why in the world I haven’t posted a recipe in a while. Well the truth is life has been crazy. These last 2 months have been consumed with house projects, work and our wedding which is coming up in October. Where does time go? I have been trying to get back on the cooking every night train, but at the end of the day I have been a bit exhausted. I made these BBQ Chicken & Sweet Potato Bowls the other week and they were heavenly, and I didn’t feel guilty eating it (not going to break the wedding dress).
It has been quite the struggle to find foods lately that don’t bloat me and keep me on a healthy track towards the wedding. I have said this a million times, but I am not trying to loose weight for our wedding. I am only trying to tone up and maintain my weight. These BBQ Chicken & Sweet Potato Bowls were heavenly and filled up my tummy.
BBQ Chicken & Sweet Potato Bowls
Ingredients
- 2 Sweet Potatoes cubed
- 2-3 Chicken Breasts Cubed
- 1 Cup Fresh or Frozen Corn
- 1 Can Black Beans drained and rinsed
- 1 Cup BBQ Sauce
- 1/2 Onion Diced
- 1 1/2 Tbsp Cajun Seasoning
- 2 Tbsp Olive Oil
- 1 Jalapeño Sliced
- 1 Cup Shredded Pepper Jack
Instructions

Preheat oven to 425°.

Place cubed sweet potatoes on a cookie sheet. Coat with olive oil and sprinkle with cajun seasoning. Place in oven and bake 30-35 minutes. Stirring at 15 and 25 minutes.

While sweet potatoes are cooking place cubed chicken, onion, olive oil and cajun seasoning in a large fry pan. Cook throughly.

Once chicken is done add in corn and black beans. Mix and fry for 5 minutes.

Add in BBQ sauce to chicken mixture and simmer on low until the potatoes are done.

Once the sweet potatoes are done divide evenly amongst 4 bowls. Top with BBQ chicken mixture and sprinkle with shredded pepper jack cheese and a few sliced jalapeños.
