Cranberry Gingerbread Scones

I was sitting in the drive through at Starbucks the other day, waiting to order an americano, and I saw the beloved holiday treat sign. The treat sign with the snow man cookie, gingerbread loaf and all the holiday drinks. Boy oh boy was I super tempted to get a piece of the gingerbread loaf, but I restrained. I figured I didn’t really need the extra sugar. My mouth and brain begged to differ though. Which is why I present you with these Cranberry Gingerbread Scones. They are a healthier option than the Starbucks Gingerbread loaf.

These Cranberry Gingerbread Scones are something to dream about. They are just that good. They aren’t overly sweet and have a delicious spice and gingerbread flavor. The tart cranberries are what really makes them. The tart with the spice. My mouth and stomach are in heaven, or should I say were, because I definitely have eaten my fare share. I hope you enjoy these delicious holiday treats just as much as we did.

Cranberry Gingerbread Scones

Ingredients

  • 3 Cups Flour
  • 3/4 Cup Brown Sugar Packed
  • 1 Tbsp Baking Powder
  • 1 Tsp Ground Ginger
  • 1/2 Tsp Ground Cloves
  • 1/2 Tsp Ground Nutmeg
  • 1/2 Tsp Cinnamon
  • 1/3 Cup Molases
  • 1/2 Cup Butter Melted
  • 1/3 Cup Milk
  • 2 Eggs
  • 1 Tbsp Vanilla
  • 1 1/2 Cups Fresh Cranberries

Instructions

  1. Preheat oven to 400°

  2. Combine all ingredients in a mixing bowl besides the fresh cranberries.

  3. Start mixer on low and let all powdered ingredients combine with wet ingredients.

  4. Turn up mixer to a medium speed and let ingredients thoroughly combine.

  5. Once ingredients are thoroughly combined stir in fresh cranberries by hand.

  6. Place a piece of parchment paper on a cookie sheet and grease it.

  7. Divide batter into a dozen large dollops of dough. (It is likely you will only be able to bake 6 scones at a time.)

  8. Bake for 15-20 minutes.

  9. Remove from oven and place on cooling rack right away.

  10. Enjoy!
