Grilled Chicken Cesar Salads

Grilling romaine lettuce has to be one of my favorite healthy summer dinner options. Charring the lettuce gives it a bit more flavor and makes for a heavenly salad. It also makes for an easy week night meal, or meal when you just don’t feel like cooking.

The below Grilled Chicken Cesar Salad is currently my favorite and on frequent rotation in our house. I introduced this salad to my Mom this week and she loved it. She had never heard of grilling romaine lettuce.

Variations

You don’t have to make this salad a Cesar Salad. You literally can throw any toppings and dressing you would like on the grilled romaine lettuce. I am currently hooked in making our Cesar, but I am sure as the spring and summer progress I will make this salad with grilled romaine lettuce numerous ways.

Ingredients

  • 2 Heads Romaine Lettuce
  • 2 Medium-Large Chicken Breasts
  • 1 Cup Shaved Parmesan Cheese
  • 1 Cup Yellow Cherry Tomatoes Halved
  • 2 Tbsp Olive Oil
  • 1 bag Croutons (you won’t use all of them; sprinkle as desired)
  • 4 Tbsp Capers (In Vinegar)
  • 8 Tbsp Cesar Salad Dressing
  • Lemon Pepper
  • Salt & Pepper

Instructions

  1. Cut romaine lettuce heads in half and place on cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. 

  2. Place chicken breasts on a plate. Season with lemon pepper. 

  3. Grill chicken breasts first. Use a meat thermometer to test when they are done. Chicken needs to reach a temperature of 165° Fahrenheit. 

  4. When chicken is done place on a clean plate and cover with tin foil. 

  5. Place romaine lettuce head halves face down on the grill. Char as desired and remove. 

  6. Place romaine lettuce head half face up on your plate. Sprinkle with: chicken, tomatoes, shaved parmesan cheese, croutons and capers.   Drizzle with cesar dressing. 

  7. Enjoy!
