Kiwi Blackberry Salads

I crave vegetables and fruits everyday most all day. Don’t get me wrong I do crave other things, but there is something about eating clean and healthy that makes me feel so good. It gives me energy and does not drag me down. Monday’s tend to be salad days at our house, as over the weekend we let ourselves indulge in some of the not so healthy food loves.

Kiwi Salad with Fruits and Veggies

Last night I whipped together this Kiwi Blackberry Salad. It was the perfect combination of sweet and refreshing for dinner. Both my husband and I loved it. The only “pain” to making this salad is peeling the kiwi. I feel like kiwi’s are so hard to peel, and then you get it peeled and there is not much fruit, so you peel more.

I also couldn’t find goat cheese crumbles at the grocery store, so I had to buy a goat cheese log, slice it and then crumble it, which was a little more work, but not bad at all. If you can’t find goat cheese crumbles and crumbling up slices from a goat cheese log seems like too much work, then just leave the goat cheese out OR use a different type of cheese. You could use parmesan flakes, even though goat cheese definitely pairs better.

Ingredients

  • 2 Chicken Breasts
  • 4 Cups Argula
  • 1/4 Cup Fresh Dill
  • 4 Kiwi Peeled and sliced
  • 1 1/2 Cups Blackberries
  • 1 Cucumber Sliced
  • 2 Avocados Halved and Cut into little pieces
  • 1 Cup Goat Cheese Crumbles
  • Balsamic Vinegar
  • Salt & Pepper

Instructions

  1. Preheat Oven to 375°

  2. Place chicken breasts on a cookie sheet and sprinkle with salt and pepper. 

  3. Once oven is preheated place in oven and bake until the internal temperature of the chicken breasts is 165°. This will vary in time depending on the size of chicken breast but will take around a half hour. 

  4. While chicken is cooking place arugula and fries dill in a bowl. Toss and divide evenly amongst 4 plates. 

  5. Sprinkle the sliced cucumber, avocado pieces, blackberries and kiwi on top of the lettuce. 

  6. Once chicken is done slice and place a half of chicken breast on top of each salad. 

  7. Sprinkle with goat cheese and drizzle with balsamic vinegar. 

  8. Enjoy!
