    Southwest Cobb Salad

Boy oh boy it’s been hot in Colorado, so much so it’s nice (despite the air conditioning) to make dinner on the grill. It save the house from temporarily heating up and adds some great flavor to your food. We made these Southwest Cobb Salads last night and they were absolutely delicious. Differentiating our salads lately has been a struggle, but last week while traveling I had a southwest salad and it led to the inspiration for this. Who doesn’t like the sound of a grilled salad? We must not be friends if you are saying yes, or maybe we are, you just haven’t stepped out of the box. I…

    Kiwi Blackberry Salads

I crave vegetables and fruits everyday most all day. Don’t get me wrong I do crave other things, but there is something about eating clean and healthy that makes me feel so good. It gives me energy and does not drag me down. Monday’s tend to be salad days at our house, as over the weekend we let ourselves indulge in some of the not so healthy food loves. Last night I whipped together this Kiwi Blackberry Salad. It was the perfect combination of sweet and refreshing for dinner. Both my husband and I loved it. The only “pain” to making this salad is peeling the kiwi. I feel like…

    Grilled Chicken Cesar Salads

Grilling romaine lettuce has to be one of my favorite healthy summer dinner options. Charring the lettuce gives it a bit more flavor and makes for a heavenly salad. It also makes for an easy week night meal, or meal when you just don’t feel like cooking. The below Grilled Chicken Cesar Salad is currently my favorite and on frequent rotation in our house. I introduced this salad to my Mom this week and she loved it. She had never heard of grilling romaine lettuce. Variations You don’t have to make this salad a Cesar Salad. You literally can throw any toppings and dressing you would like on the grilled…

    Pepper Nachos

My cravings for potato chips and tortilla chips never seem to go away. In an effort to not give into a “cheat” meal I made these pepper nachos. Boy oh boy were they delicious, and I didn’t feel guilty that I was eating horribly. I used a combination of different colored peppers with mine as I like a colorful plate, but use whatever color peppers are your favorite. Toppings I didn’t add a boat load of toppings to mine. When making them I kind of felt more was less. I stuck with the protein, fiber and of course the best food group around cheese. I then added in a few…

    Chicken Strip Salad

With all the crazy the last month before the wedding our meals took a turn towards the easy side as time was extremely limited. These chicken strip salads were amazing, and combined a comfort food with a healthy base. We all desire to eat bad every once in a while. I figured this was the perfect way to help keep my figure and let us have chicken strips at the same time. I love making our own chicken strips as I know exactly what goes into them. While the ease of picking up a bag of already made chicken strips at the store is desirable, there are way to many…

    Honey Mustard Broccoli Slaw Salad

What a treat this Honey Mustard Broccoli Slaw Salad was. I threw this baby together this past Sunday night for a healthy meal to get back into the week. I knew it would be good, but I really didn’t know how good it would be. I am in love with this salad and the ease of making it was fabulous. While the time on the directions may seem a bit long it’s due to the larger cooking time of the corn, quinoa and chicken, so don’t let this deter you from making it. I found this salad to be quite the detox and rid my body of all it’s bloating,…

    Go To Travel Eats

On the Road Again. Traveling for work or for personal endeavors can be a beast. The hardest part of traveling a lot is having to eat out every single meal. Below are some of my go to travel eats to help keep me the healthiest me.   Breakfast Drink: Venti Iced Americano with an extra shot and a splash of cream. Food: Protein Box from Starbucks (hard boiled eggs, cheese, fruit and peanut butter) Cheat Food: Scone, muffin or lemon bread from Starbucks If I am at a hotel that has a breakfast bar…

Chocolate Chip Peanut Butter Protein Balls

Chocolate Chip Peanut Butter Protein Balls. What a mouth full to say, but delicious to eat. I made these protein balls the other day for a healthy, filling and sweet snack. A sweet delicious snack they are. I tend to have a large sweet tooth, which doesn’t necessarily lead me to eat the best at times. I figured these protein balls not only would suffice my sweet tooth but keep me full and away from my bad snack habits. Protein Ball Pairings: Coffee (I have done this so many times since I have made them. They are the perfect addition to your morning coffee/breakfast. When I say perfect, I mean…

    Cucumber Avocado Salad

Who is still on the path of eating healthy(ish) this week? We are! While eating healthy is a full time job itself we do take the weekend as free days, because let’s face it, you only live once and food is just WAY TOO GOOD. We tried a combination of cucumber, avocado and chicken for dinner and it was surprisingly quite tasty while extremely healthy. Cucumbers are known to help with bloating, which, my gosh, I feel like is a daily battle. The avocado is a nice a healthy fat to help fill you up. When you take a peek at the recipe you will note feta cheese is optional.…
