Grilled Romaine Chicken Cesar Salad

Cesar salad is definitely one of my more favorite salads. When I make them for us at home, I never really abide by “typical” Cesar salad rules, I tend to just through whatever we like together with some Cesar dressing and call it delicious.

A few weeks ago I was watching one of my favorite bloggers, Living with Landyn’s instagram story and saw that she was grilling romaine lettuce. While I am pretty sure my food repertoire knew about grilling romaine lettuce it hadn’t come to mind in a long time. Love it when someone else sparks your creative pallet. Especially when it comes to food. Grilling romaine lettuce definitely provide extra flavor to your salad. With Cesar salads being one of our favorite and me wanting to have some grilled romaine lettuce I decided to combine the two. What better combination than a grilled romaine chicken Cesar salad, of course with a little Jessica flair.

The picture post doesn’t show the fresh parmesan flakes and dressing I put on, so I would highly recommend adding these (the picture wasn’t as beautiful with the toppings on) and so I opted for the “naked” picture version.

Grilled Romaine Cesar Salad

Ingredients

Chicken

  • 2 Chicken Breasts
  • 1 tsp Lemon Pepper
  • 1 tsp Garlic Powder

Grilled Romaine

  • 1 head Romaine Lettuce cut in half
  • 1-2 Tbsp Olive Oil to drizzle
  • Salt & Pepper to taste

Salad

  • 1 cup Yellow pear tomatoes halved
  • 1 Avocado Halved and sliced
  • 4 Radishes sliced
  • 4 Green Onions sliced
  • 1/4 cup Parmesan Cheese flakes
  • Cesar Dressing (favorite brand)

Instructions

Chicken

  1. Turn on grill and let heat to medium heat. 

  2. Sprinkle chicken breasts with lemon pepper and garlic powder. Place on grill. 

  3. Grill until chicken breasts reach 165 degrees Fahrenheit. Once done place on plate and cover with tin foil until rest of salad is completed. 

Grilled Romaine

  1. Cut romaine lettuce down the middle the long way and drizzle with olive oil and then sprinkle with desired amount of salt and pepper. 

  2. Once chicken is done place romaine heads inside down on grill for 1-2 minutes until desired char. You don't want to grill too long as they will become a wilted mess. Remove from grill. 

Salad

  1. While chicken is grilled cut up avocado, green onions, tomato and radishes. Plate as desired. 

  2. Once chicken and romaine lettuce are done add to plate. 

  3. Top with fresh parmesan flakes and Cesar dressing. 

  4. Enjoy!
