Garbanzo Bean Herb Summer Salad

Summer is here! What better way to kick off the start to summer than this healthy Garbanzo Bean Herb Summer Salad? I made this salad the other night and it easily became my new favorite. I will definitely be making this numerous times. It’s easy and delicious and keeps well in the refrigerator, so the leftovers are just as delicious as the first initial bowl.

The inspiration for this recipe came from our lack of groceries in the house. I had all good intentions of going to the grocery store on Sunday. Good intentions clearly became no attentions after my fiancĂ© wash and waxed my car and the weather decided it was going to rain. I didn’t want my freshly cleaned car having rain spots, that would just be a travesty. Keeping my good intentions going I scoured our cupboard and refrigerator and threw this delicious master piece together.

Garbanzo Bean Herb Summer Salad

Course Dinner

Ingredients

  • 2 cans Garbanzo Beans drained and washed
  • 2 cups Farro cooked
  • 1/2 Cucumber diced
  • 1 Green Pepper diced
  • 4 Carrots sliced
  • 4-6 Stalks of Celery sliced
  • 4 Green Onions sliced
  • 1/8 cup Fresh Oregano chopped
  • 1/8 cup Fresh Cilantro chopped
  • 1/8 cup Fresh Dill chopped
  • 1 lb Ground Turkey browned
  • 1 Tsp Chili Lime Seasoning (from Trader Joes)
  • 1/2 Cup Red Wine Vinegar
  • 1/4 Cup Golden Balsamic Vinegar
  • 1/2 Cup Olive Oil
  • 1 tsp Garlic Powder
  • Salt & Pepper to taste

Instructions

  1. Cook farro and brown ground turkey seasoning ground turkey with the chili lime seasoning. Set aside. 

  2. Chop and dice all veggies and herbs as instructed. Place in bowl. 

  3. Drain garbanzo beans and rinse. Pour in the bowl with the veggies. 

  4. Combine veggie herb bean mixture, farro and cooked ground turkey in large bowl. Add in olive oil, red wine vinegar and golden balsamic vinegar. Stir thoroughly. 

  5. Season with garlic powder, salt and pepper. 

  6. Serve in 6-8 bowls pending appetite.
