    Happy early Spring! Wednesday is the official start to Spring and I couldn’t be more excited. I am beyond excited to get back out in the yard and get my garden and flower pots going.     My cravings for potato chips and tortilla chips never seem to go away. In an effort to not give into a “cheat” meal I made these pepper nachos. Boy oh boy were they delicious, and I didn’t feel guilty that I was eating horribly.     By popular vote I am sharing my Sweet & Sour Pork recipe. It’s definitely not hard. In fact the idea came to me while thinking about my childhood. Sweet & Sour Pork was one of my favorite recipes my Dad’s mother (Grandma) made.  I remember requesting this meal numerous times growing up.     Twas the night before Halloween, and all through the house, not a creature was stirring not even my spouse… Happy Halloween Eve, if you consider that a thing.     Fall Harvest Bowl

    Beyond excited that we had temperatures in the 60s this week in Denver, Colorado. You may want to slap me after I say this, but I don’t really like Summer; fall and winter are more of my jam.
