Cajun Chicken Mango Sandwich

It officially hit 90 degrees Fahrenheit today in Denver, Colorado. Craziness!!! It’s only May and we are in the 90s. What is summer going to bring? While battling the heat this delicious recipe has filled out bellies. The combination of cajun with the fresh mango was absolutely delicious. It’s an easy meal to make during the week or even during the weekend.

My recipe has you baking the chicken, but with the warmth coming, I recommend grilling the chicken for the added flavor of the grill and to keep the heat out of the house. We paid the sandwiches with homemade potato wedges, but feel free to pair with whatever side your heart desires. The grilled corn salad I posted the other day would be an amazing side as well.

Ingredients

  • 3 Chicken Breasts
  • 24 leaves Fresh spinach
  • 2 Mangos
  • 1 Cup Avocado Mayo
  • 2 Tbsp Cajun Seasoning
  • 6 Slices Caramelized Onion Cheese (Trader Joes)
  • 1/4 Tsp Onion Salt (Trader Joes; additional for bread)
  • 1/4 Tsp Garlic Powder (additional for bread)
  • 1 Loaf Fresh Bread
  • 1/4 Cup Olive Oil
  • Smoked Paprika To Taste

Instructions

  1. Preheat oven to 400 degrees. 

  2. Place chicken breasts on a pan and sprinkle with approximately 1 Tbsp of Cajun Seasoning. Place in oven and bake until 165 degrees Fahrenheit. 

  3. While chicken is cooking slice mangos and wash spinach leaves. Set aside. 

  4. Slice caramelized onion cheese. Set aside. 

  5. Slice loaf of bread into 12 slices. 

  6. Place avocado mayo, 1 Tbsp cajun seasoning, onion salt and garlic powder in a bowl. Mix thoroughly. Set aside. 

  7. Place bread slices on a cookie sheet, brush with olive oil and sprinkle with garlic powder and onion salt. Set aside.

  8. Once chicken is done turn the oven on a medium to high broil. Place cookie sheet of bread slices under broiler until browned to desire. Remove from oven. 

  9. Slice chicken breasts and set aside.  

  10. Spread cajun mayo on all 12 slices of bread. Place chicken slices on top of 6 pieces of bread.

  11. Top chicken with caramelized onion cheese, spinach and mango. 

  12. Sprinkle sandwich with smoked paprika and enjoy!
