Pineapple Shrimp Kabobs w/ Garlic White Wine Sauce

We are a little over a week until the official start of summer. If you ask me, summer is definitely already here with the hot temperatures we have been having. In an effort to keep the house cooler and not make the air conditioning work quite as hard, we have been using the grill for most of our meals. These Pineapple Shrimp Kabobs with Garlic White Wine Sauce are the perfect sweet and spicy meal to satisfy those taste buds.

Pineapple Shrimp Kabobs w/ Garlic White Wine Sauce

Ingredients

Kabobs

  • 20 Raw Shrimp Shelled and Deveined
  • 1 Fresh Pineapple Cubed
  • 1 Red Onion Cubed
  • 1 Red Pepper Chopped into large square pieces
  • 1 Yellow Pepper Chopped into large square pieces
  • 1 Orange Pepper Chopped into large square pieces
  • 1/4 Cup Cilantro

Garlic White Wine Sauce

  • 1 Cup White Wine
  • 3 Cloves Garlic Minced
  • 1/4 Cup Olive Oil
  • 1 Tsp Red Pepper Flakes
  • Salt To Taste

Instructions

Kabobs

  1. Start grill and let heat up to a medium-high temperature. 

  2. Alternate adding: shrimp, pineapple, onion, red pepper, yellow pepper and orange pepper to kabob skewers. 

  3. Place on grill and grill until shrimp and done (pinked up) and veggies & pineapple are to desired char. 

Garlic White Wine Sauce

  1. While kabobs are grilling, combine all sauce ingredients in a sauce pan. Simmer on low heat for 10 minutes, making sure you stir often. (Make sure the heat isn't too high.) Set aside when done. 

Assembly

  1. Slide all shrimp, veggies and pineapple off the kabob sticks into 4 bowls. 

  2. Ladle the garlic white wine sauce on top of the 4 bowls and garnish with cilantro. 

  3. Enjoy!
