    Southwest Cobb Salad

Boy oh boy it’s been hot in Colorado, so much so it’s nice (despite the air conditioning) to make dinner on the grill. It save the house from temporarily heating up and adds some great flavor to your food. We made these Southwest Cobb Salads last night and they were absolutely delicious. Differentiating our salads lately has been a struggle, but last week while traveling I had a southwest salad and it led to the inspiration for this. Who doesn’t like the sound of a grilled salad? We must not be friends if you are saying yes, or maybe we are, you just haven’t stepped out of the box. I…

    Kiwi Blackberry Salads

I crave vegetables and fruits everyday most all day. Don’t get me wrong I do crave other things, but there is something about eating clean and healthy that makes me feel so good. It gives me energy and does not drag me down. Monday’s tend to be salad days at our house, as over the weekend we let ourselves indulge in some of the not so healthy food loves. Last night I whipped together this Kiwi Blackberry Salad. It was the perfect combination of sweet and refreshing for dinner. Both my husband and I loved it. The only “pain” to making this salad is peeling the kiwi. I feel like…

    Sun Dried Tomato Gnocchi

All the yum here again today. We had this delicious Sun Dried Tomato Gnocchi the other night and boy it hit the spot. It literally took me no more than a half hour to prep and cook. Meaning it’s the perfect meal for during the week or even weekend when your life/ schedule have you going like crazy or when you are just feeling the need to relax but still need to get something for dinner made. I kept our Sun Dried Tomato Gnocchi very simple and didn’t add many veggies, however if you want more veggies, definitely feel free to add them in. Ideas for additional vegetables to add…

    Spring Pasta

Happy early Spring! Wednesday is the official start to Spring and I couldn’t be more excited. I am beyond excited to get back out in the yard and get my garden and flower pots going. I am even more excited for grilling season to begin and be able to cook the majority of our food outside. While this week is still a bit chilly in Denver, Colorado, I settled for making an indoor Spring meal; Spring Pasta. If you aren’t one for any of the vegetables in this pasta, you definitely can take them out. You can also add less vegetables if you want more pasta. We love vegetables in…

    Cavatini

Cavatini is a dish I grew up with that is absolutely delicious and super easy to make. It’s the perfect dinner party or week night meal. Basically any time you don’t have a lot of time, or you want to be able to socialize with family, friends or guests, this is your dish. I am sure everyone will love it. Family Tradition This dish holds a bit of memories for me. You guys see me as a girly girl/boss babe all the time, but what you don’t know, is I grew up hunting. Every year it was a family affair, we would go to “hunting camp.” Hunting camp consisted of…

    Pepper Nachos

My cravings for potato chips and tortilla chips never seem to go away. In an effort to not give into a “cheat” meal I made these pepper nachos. Boy oh boy were they delicious, and I didn’t feel guilty that I was eating horribly. I used a combination of different colored peppers with mine as I like a colorful plate, but use whatever color peppers are your favorite. Toppings I didn’t add a boat load of toppings to mine. When making them I kind of felt more was less. I stuck with the protein, fiber and of course the best food group around cheese. I then added in a few…

    Sweet & Sour Pork

By popular vote I am sharing my Sweet & Sour Pork recipe. It’s definitely not hard. In fact the idea came to me while thinking about my childhood. Sweet & Sour Pork was one of my favorite recipes my Dad’s mother (Grandma) made.  I remember requesting this meal numerous times growing up. It was this and Smoked Cheesy Ham Soup; I will make this soon and share. I didn’t have my Grandma’s recipe on me yesterday when I made it, so I improvised and threw it together as I thought it should be, and it turned out super delicious.  Additional Veggies/Veggie Substitutions Sweet Pea Pods Zucchini Red Pepper Yellow Pepper…

    Adult Sloppy Joes

Growing up in the Midwest Sloppy Joes were a frequent menu item. Not in our every week meals, but for:  Holidays Parties, graduations, etc.  When people got together to lend a helping hand at someone’s house (common thing) At the time I didn’t have an appreciation for the deliciousness of them, but as I have gotten older I have. I also have made the standard “sloppy joe” a little more gourmet, into more of an Adult Sloppy Joe. What is an Adult Sloppy Joe? It’s more than just a slap of hamburger meat between two buns. It’s a delicious vegetable and meet mixture with a homemade sauce on top of…

    Chicken Strip Salad

With all the crazy the last month before the wedding our meals took a turn towards the easy side as time was extremely limited. These chicken strip salads were amazing, and combined a comfort food with a healthy base. We all desire to eat bad every once in a while. I figured this was the perfect way to help keep my figure and let us have chicken strips at the same time. I love making our own chicken strips as I know exactly what goes into them. While the ease of picking up a bag of already made chicken strips at the store is desirable, there are way to many…
