Sweet Potato Hash Bake

I am definitely not one to request sweet potatoes for dinner, but at request for comfort food, I made this sweet potato hash bake. It was extremely delicious and easy to whip up. You could even throw it together over the weekend and place it in the freezer and then bake during the week. 

Sweet Potato Hash Bake


Meat

  • 2 lbs Ground Sausage (Browned)

Vegetables

  • 4 Sweet Potatoes (Finely Cubed)
  • 5-8 cups Kale
  • 1 Onion (Diced)

Dairy

  • 4 cups parmesan (shredded )
  • 1/2 cup Feta Cheese (Crumbled)

Misc

  • 1 tbsp Olive Oil
  • 1 tbsp Chipotle Seasoning
  • Salt & Pepper (to taste)

Instructions:

  1. Preheat oven to 350 degrees. 

  2. Place finely cubed sweet potatoes, onions, olive oil, chipotle seasoning and salt & pepper in a skillet. Cook until sweet potatoes are browned to desire. 

  3. While sweet potatoes are cooking, brown the ground sausage. 

  4. Combine browned sweet potato hash mixture, ground sausage, kale and crumbled feta cheese in a bowl. Mix. 

  5. Grease a 9×13 inch pan and pour potato sausage mixture in. Bake for 15 minutes. 

  6. Add parmesan cheese on top and bake for another 15-20 minutes to desired cheese melt/crispness.
