    Chicken Noodle Soup

Twas the night before Halloween, and all through the house, not a creature was stirring not even my spouse… Happy Halloween Eve, if you consider that a thing. Tomorrow is Halloween and all the little kids will be out trick or treating. Tomorrow here in Denver is supposed to be a tad bit chilly, so what better and easy way to warm up post trick er treating with the kids or handing out candy, than to make this homemade chicken noodle soup. You can throw it together ahead of time and just let it simmer an hour or so before dinner and wa-lah, all the warm delicious goodness is ready…

    Summer Potato Salad

We had a house full of people this past weekend. A house full of people and my thoughts are what am I going to make for everyone for lunch. With the hot summer heat I decided to have a sandwich bar, fresh cherries, this homemade potato salad with a beer and a fresh rhubarb crumble with espresso for dessert. Boy of boy was this combination a hit and it was extremely easy. The best thing about this potato salad is you can make a day or two ahead of time when you actually have the time. I grew up with a rendition of this potato salad. My mom never made…

    Strawberry Avocado Salad

It’s officially Spring ladies and gents and I am adoring the Spring weather we are having in Colorado with this delicious Strawberry Avocado with Poppy Seed Dressing. It’s an easy dinner that’s not going to break the bank; calorie or actual bank, and something that you can easily whip together during the week. My fiancé and I have been on an avocado a day kick lately. Literally I think we have at least one a day. I just can’t help myself, they are so good and are a great fat for you. Why not incorporate them into yet another meal? The combination of fresh strawberries and avocado with the poppy…

    Cucumber Avocado Salad

Who is still on the path of eating healthy(ish) this week? We are! While eating healthy is a full time job itself we do take the weekend as free days, because let’s face it, you only live once and food is just WAY TOO GOOD. We tried a combination of cucumber, avocado and chicken for dinner and it was surprisingly quite tasty while extremely healthy. Cucumbers are known to help with bloating, which, my gosh, I feel like is a daily battle. The avocado is a nice a healthy fat to help fill you up. When you take a peek at the recipe you will note feta cheese is optional.…

    Roasted Tomato and Pepper Soup

Every week while making the grocery list and planning our meals I ask my fiancé if there is anything special he would like. Last week when I asked this, my fiancé said he wanted tomato soup and grilled cheese. When he said this, I knew he was referring to a processed tomato soup. I absolutely hate canned and processed soups. They contain so much unnecessary sodium and who knows what else, and so I decided to make a homemade tomato soup. Now tomato soup itself sounds so bland so I spiced it up by roasting the tomatoes with some red peppers . The below Roasted Tomato & Pepper Soup was…

    Sweet Potato Nachos

It was one of those evenings where I wanted a good meal but felt a tad bit lazy and didn’t want to be in the kitchen for awhile. I decided to make a “healthier” take on nachos.  Don’t get me wrong they have cheese and sour cream so they aren’t completely healthy but a tad bit healthier than the normal nacho option.     I am not one for sweet potatoes. Why does dinner have to be sweet that’s what dessert is for, however when paired with the right toppings the sweet potato can be the perfect dinner.   The sweet potatoes took surprisingly longer to bake into chips than…

Thanksgiving Leftovers: Turkey Cranberry Grilled Cheese

I hope everyone had an absolutely fabulous Thanksgiving. I absolutely adore this holiday as I LOVE to cook and bake. I made everything from scratch for the entire meal. This may sound like a large undertaking but with one step at a time it was a meal; of course not without hiccups. Cooking got quite eventful with the power going out twice and the later of the occurrences while everything was in the oven. I assured everyone we had plenty of beverages to suffice us until the power came back on and so no tears were shed. While leftovers are nice and all, eating the same thing over and over…
