    I crave vegetables and fruits everyday most all day. Don’t get me wrong I do crave other things, but there is something about eating clean and healthy that makes me feel so good. It gives me energy and does not drag me down. Monday’s tend to be salad days at our house, as over the weekend we let ourselves indulge in some of the not so healthy food loves.     Pepper Nachos

    My cravings for potato chips and tortilla chips never seem to go away. In an effort to not give into a “cheat” meal I made these pepper nachos. Boy oh boy were they delicious, and I didn’t feel guilty that I was eating horribly. I used a combination of different colored peppers with mine as I like a colorful plate, but use whatever color peppers are your favorite. Toppings I didn’t add a boat load of toppings to mine.     Sweet & Sour Pork

    By popular vote I am sharing my Sweet & Sour Pork recipe. It’s definitely not hard. In fact the idea came to me while thinking about my childhood. Sweet & Sour Pork was one of my favorite recipes my Dad’s mother (Grandma) made.  I remember requesting this meal numerous times growing up. It was this and Smoked Cheesy Ham Soup; I will make this soon and share.     Happy Taco Tuesday! Looking to switch up your normal taco Tuesday routine? This Citrus Bean Salad and Taco Quesadillas are the perfect way switch it up and add that spice to your Tuesday night. My husband and I both enjoyed this meal, and the best part, it’s super easy and doesn’t take much time. I think taking the cilantro leaves off the stem takes the longest.     Fall Harvest Bowl

    Beyond excited that we had temperatures in the 60s this week in Denver, Colorado. You may want to slap me after I say this, but I don’t really like Summer; fall and winter are more of my jam. I love the cooler weather and being able to bundle up.  With the bundling up and cooler temps also comes the warmer and hardier food.     What a treat this Honey Mustard Broccoli Slaw Salad was. I threw this baby together this past Sunday night for a healthy meal to get back into the week. I knew it would be good, but I really didn’t know how good it would be. I am in love with this salad and the ease of making it was fabulous. While the time on the directions may seem a bit long it’s due to the larger cooking time of the corn, quinoa and chicken, so don’t let this deter you from making it.
