Valentines Pupcakes

I can’t believe it’s Valentines day tomorrow. Can you? Time has already been flying by this year. I just don’t understand where it goes. I remember when I was younger saying to my Dad, “I wish I were older,” or “I wish it was already (fill in the date),” my Dad always said to me, “Jessica, don’t wish your life away, time already goes too fast.” Boy oh boy was he right. This year has flown back which brings me back to Valentines Day.

What does Valentines Day mean to you? The cashier at Whole Foods this past weekend got me thinking. I was in line checking out, well almost to the check out, but there was a guy in front of me. I heard her ask him a question, but didn’t know what it was at the time. He said “no” and they went on to both talking how they didn’t like something. Little did I know, but the cashier asked me the same question when it was my turn. She said, “I am taking a survey as to whether people like or hate Valentines Day.” I thought I was in for it, well not really, but I knew my answer was going to be yes, and I had just heard her saying to this guy how she hates it.

I told her I like it and then proceeded to back up my answer, because clearly that’s what every person does, not. I am just a type A freak who has to have fact or information in this case behind my response. I said I like Valentines day because it’s another excuse to show people how much you love them. It doesn’t have to be a gift, it can just be a kind gesture. I went on to say how there are so many people in the world just needing a little extra love and why not use Valentines Day, a holiday of love, to give/show them that. To my dismay she said she could agree with that.

Sweet Treats

In honor of Valentines Day and treating the men (my Husband and Pup) in my life I am making them a sweet treat for the day. I am making my husband and I red velvet cupcakes, which are sure to delicious. I will likely take in too much sugar tonight while making them and all day tomorrow, but hey, you only live once and life is way too short. I am also making our pup a little sweet treat. I am using the Peanut Butter Pupcakes recipe from the blogger/website Damn Delicious. I am using her core recipe and doing a little different for the frosting and toppers.

Peanut Butter Pupcakes

Pupcake recipe from Damn Delicious. I added the whip cream to the frosting and a different topper.

Ingredients

Pupcake

  • 1 cup whole wheat flour
  • 1/4 cup old fashioned oats
  • 2 teaspoons baking powder
  • 1/2 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 carrots peeled and shredded

Pupcake Frosting

  • 4 ounces Cream Cheese Softened
  • 1/2 Cup Peanut Butter
  • 1 Cup whip cream/cool whip

Instructions

Pupcakes

  1. Preheat oven to 350 degrees F. Line a 6-cup standard muffin tin with paper liners; set aside.
  2. In a large bowl, combine flour, oats, baking powder, pumpkin, apple sauce, vegetable oil and eggs. Stir in carrots.
  3. Scoop the batter evenly into the muffin tray. Place into oven and bake for 15-20 minutes, or until a tester inserted in center comes out clean. Remove from oven and cool completely on a wire rack before frosting.

Frosting

  1. Combine cream cheese, peanut butter and whip cream in your mixer. Mix on medium to high until frosting is a nice whipped consistency. 

Assembly

  1. Grab a ziplock bag and place all frosting in the zip lock back. Seal the top. 

  2. Cut a small to medium size piece of the corner of the bag off and use this to pipe the frosting on the cupcakes. 

  3. Top with a doggie treat. 

  4. Let your pup enjoy!
