Kiwi Cilantro Margaritas

Cheers and happy Thursday! Does anyone feel like the day off from work on a Wednesday really messed with your week vibes and push? I certainly do. Don’t get me wrong having off on Wednesday was amazing and a good day to get caught up on laundry, all things wedding planning and the house, but the day just didn’t feel like an off day. What are you supposed to do with one day off in the middle of the week?

Now that we have officially made it to Thursday what better way to reward yourself tonight than to make one of these Kiwi Cilantro Margaritas. They are incredibly delicious, refreshing and the perfect pairing to a hot summer day. My fiancĂ© and I devoured ours and our pup even wanted a taste too. While I don’t condone feeding your dog alcohol, Duke tends to always sneak a lick of my drink while in hand. I figure one sip won’t hurt him. There are way worse things he could be getting into and eating and licking.

Kiwi Cilantro Margaritas

Ingredients

  • 5 Kiwis
  • 2 Limes halved
  • 3 Tbsp White Sugar
  • 1/4 Cilantro
  • 2 Tbsp Lime juice
  • 2 Shots Tequila
  • Salt (for glass rim)

Instructions

Simple Syrup

  1. Peel all 5 kiwis and set one aside. Muddle the remaining 4 kiwis in a small pot. 

  2. Add the 2 cups of water, 4 lime halves, white sugar and cilantro to the small pot with the muddled kiwis. (Make sure you squeeze the lime halves into the pot before adding the lime itself.) 

  3. Place pot on medium heat and bring to a boil. Boil for roughly 5-10 minutes until sugar is dissolved. 

  4. Let simple syrup cool for at least 30 minutes before making drinks. It's best to make well ahead of time and let site in the refrigerator. 

  5. Strain liquid after it's cooled a bit and place in a pitcher. Set aside. 

Margarita Assembly

  1. Pour salt onto a plate and set aside. 

  2. Wet the rim of 2 margarita glasses with half of the kiwi that was originally set aside. 

  3. Dunk kiwi coated rim into the salt. 

  4. Add 1 large ice cube to each glass. If you do not like ice cubes, add the ice cubes to a shaker. 

  5. Place 1 Tbsp of lime juice in each glass. 

  6. Either pour 1 shot of tequila in each glass and top off with Kiwi cilantro simple syrup OR pour both shots of tequila and kiwi cilantro simple syrup in a cocktail shaker and give it 30-50 shakes. Evenly divide amongst the 2 glasses. 

  7. Cut the remaining half a kiwi into 2 pieces and use it to garnish the top of each glass. You can also add a sprig of cilantro if you have extra.
