Christmas Cookies
I absolutely adore Christmas cookies. Let’s face it, I absolutely adore cookies in general. I have the biggest sweet tooth of life and I blame my Dad, but it’s good blame. If I think 5 cookies is 0 calories, 0 grams of fat and sugar, then they are right? Wishful thinking, but that’s the bliss of life.
Growing up my Mom made cookie boxes for everyone. When I say everyone, I mean everyone. She probably made a good 50 cookie boxes a season, and in those cookie boxes were a good 15 kinds of cookies. I remember starting after Thanksgiving her making a different batch of cookies every night. All the “rejects” as she called them went to my Dad, sister and I. I loved getting “rejects” and they were an every night thing. How I didn’t turn out to be a snowman is beside me.
I am sharing few of my favorites here with you. Only two of these favorites are on my every year baking list and the rest rotate. Being just my husband and I in our house, we don’t need the 15 kinds of cookies.
Frosted Butter Cutouts
These Frosted Butter Cutouts are an every year Christmas cookie. Not only are they are they good for Christmas, but they are a good cutout year round. I remember my Mom making these for most every holiday. They just melt in your mouth. The almond extract is clearly the secret.
Maple Pecan Cookies
The Maple Pecan Cookies are another every year Christmas cookie. They tend to be a big hit amongst everyone. The maple flavored cookie with a delectable frosting. Mmm.
Caramel-Filled Chocolate Cookies
I wasn’t a big fan of caramel growing up, but as I have aged I have grown to love it. It doesn’t get much better than these Caramel-Filled Chocolate Cookies. The white chocolate drizzle on top makes it an elegant looking cookie, but don’t let that fool you. They are super easy to make.
Nutty Caramel Clusters
Chocolate and nuts. Mmm. No this isn’t a “that’s what she said” joke. Literally chocolate and caramel on nuts. The Nutty Caramel Clusters remind me of a homemade version of a turtle, but they are much easier to make.
Chocolate Pecan Thumbprints
Chocolate Pecan Thumbprints aren’t anything too special, but they pair well with a cup of coffee. My favorite part of these cookies is the chocolate center.
Peanut Butter Cup Cookie
My Dad loved a rendition of these Peanut Butter Cup Cookies, well I don’t really think there was a cookie he didn’t love, but he was all for the peanut butter and chocolate in a cookie. I traditionally make the peanut butter cup cookie in the mini muffin pan, but my Mom introduced us to a different version this year, and they are amazing. I personally didn’t make these this year, but I “borrowed” some from my Mom. She inadvertently used Recess Pieces Peanut Butter Cups instead of regular, but this mishap turned into a delicious delight.
Coconut Pecan Cookies
Coconut Pecan Cookies may not be the best name for these cookies. They remind me of german chocolate cake in a cookie. The coconut and chocolate topping is so on point.
