Sweet Potato Hash Bake

Ingredients

Meat

  • 2 lbs Ground Sausage Browned

Vegetables

  • 4 Sweet Potatoes Finely Cubed
  • 5-8 cups Kale
  • 1 Onion Diced

Dairy

  • 4 cups parmesan shredded
  • 1/2 cup Feta Cheese Crumbled

Misc

  • 1 tbsp Olive Oil
  • 1 tbsp Chipotle Seasoning
  • Salt & Pepper to taste

Instructions

Instructions:

  1. Preheat oven to 350 degrees. 

  2. Place finely cubed sweet potatoes, onions, olive oil, chipotle seasoning and salt & pepper in a skillet. Cook until sweet potatoes are browned to desire. 

  3. While sweet potatoes are cooking, brown the ground sausage. 

  4. Combine browned sweet potato hash mixture, ground sausage, kale and crumbled feta cheese in a bowl. Mix. 

  5. Grease a 9x13 inch pan and pour potato sausage mixture in. Bake for 15 minutes. 

  6. Add parmesan cheese on top and bake for another 15-20 minutes to desired cheese melt/crispness. 

  7. Enjoy!
