Happy Taco Tuesday! Looking to switch up your normal taco Tuesday routine? This Citrus Bean Salad and Taco Quesadillas are the perfect way switch it up and add that spice to your Tuesday night. My husband and I both enjoyed this meal, and the best part, it’s super easy and doesn’t take much time. I think taking the cilantro leaves off the stem takes the longest.
