    Mexican Street Corn Chowder

How time flies. I can’t believe we are already in November. Fall is slowly leaving us and Winter is coming. Here in Colorado I don’t really feel we have gotten Fall weather. It has either been warm or freezing cold and snow. The leaves on the trees at our house never fully got to change color. They went from green, to slightly yellow to brown. I digress. Given the cooler temperatures we had yesterday in Colorado it was the perfect day to serve something warm, and slightly spicy for dinner: Mexican Street Corn Chowder. While the recipe below isn’t hard, it does take a bit of time and patience. I…

Adapting to Change: 6 Tools to Get you to the Other Side

Change is inevitable. We wouldn’t get very far if there was no change and adaptation to our surroundings. Think about it. Imagine a world in which we didn’t adapt or change with the times. How advanced would our society be? What would the world look like? When a change comes your way, whatever it may be, you may be resistant; you may be in shock or even angry or frustrated. It’s ok to let yourself feel those things. It’s only natural, we are human, but DON’T let those thoughts consume you or linger too long. Typing this to you it sounds way easier than it actually is. Sure some changes…

    Broccoli Salad

Summer is here and with that comes the heat. I am personally not a big fan of the heat. Fall is definitely more my jam, but here we are. Trying not to heat up the house and still eat dinner. The grill is always our best friend in the summer. We love the flavor the grill adds to food and it keeps the heat outside so the air conditioning doesn’t have to work harder than it already is. While the grill is great you can’t always grill everything. I have found myself getting creative with salads to serve on the side of whatever meat makes it’s way to the grill…

Self care is one of my favorite things. While this post is entitled “Self Care Sunday” self care can be done any day of the week. In fact I actually tend to pick Saturday and Sunday. Yes, and for that matter you now know I am a homebody, and don’t like to do too much on the weekends in the outing and about-ing realm. There is something ever so refreshing out recharging/ reenergizing every weekend. It really puts me in a better head space and ready to take on whatever comes my way. It also helps me start the work week refreshed and not overwhelmed and anxious. Self Care Below…

Too old, says who? You are never too old to indulge in the deliciousness that embodies frosted circus animal cookies. The beautiful white and pink frosting, the sprinkles…it’s just all the bliss. Even more so when they are being consumed by none other than myself, hehe; which leads me to the amazingly delicious Circus Animal Sugar Cookies I made the other weekend. Growing up we always had some sort of dessert in the house. I loved this. You see I have a bigger sweet tooth than most would know what to do with, and the only real thing that fixes that hankering is dessert. Common sense right? In an effort…

Eggs in Purgatory is yet another breakfast we love. I whipped up a pan of these this weekend, and they definitely sufficed the morning hunger. The best part of making these for breakfast is that you likely have all the ingredients already in your pantry and refrigerator. If you don’t have the exact ingredients I am sure you have something that can suffice. It’s all about working with what you have. This recipe is the perfect way to spice up your eggs. We place the egg and sauce mixture on top of a piece of toast, but you can do as you please. Other options you could use: Bagel Hashbrowns…

    Homemade Pop-Tarts

Growing up pop-tarts were frequently in the pantry. They were easy to grab and a delicious breakfast treat. My favorite growing up were brown sugar and cinnamon and s’more. I really didn’t have a hankering to have the strawberry or any fruit ones for that matter. As I matured and grew older the fruit pop-tarts became ever more appealing. With the copious amounts of time we are having in our houses with the stay at home ordinances and pandemic that has swept our world I am continually finding different ways to keep busy. Who doesn’t love a good mimosa? Champagne with a splash of orange juice; you really can’t go wrong. While the classic mimosa is delicious, why not spice it up a little? This is exactly what I did this weekend with the watermelon mimosa. We had cold pressed watermelon juice in the fridge and watermelon slices in the fridge, and being 100% transparent there are always bottles of champagne and bubbles in our wine cellar. I was quite taken by just how much I love the combination of watermelon juice with champagne. Don’t think of those “resolutions” as resolutions, think of them as habits you want to instill into your life. Instill lifestyle changes that you carry with you year to year. With this mentality the probability that you will continue those resolutions turned habits is increasingly higher, because you have programmed them into YOUR life. Flower & Garden Inspiration

Today is the first day of Spring. It seems just like yesterday we were ringing in the new year. I am beyond excited for Spring as it means warmer weather is coming our way. I am not looking forward to the 90s and 100s, but I am looking forward to the warmer weather and to get our garden planted as well as our flower pots planted. Last year was our first year we were able to have a garden, as our house prior didn’t have a yard for it. Having a garden last summer was such a treat. I love being able to eat home grown veggies. They just taste…

    Spring Pasta

Happy early Spring! Wednesday is the official start to Spring and I couldn’t be more excited. I am beyond excited to get back out in the yard and get my garden and flower pots going. I am even more excited for grilling season to begin and be able to cook the majority of our food outside. While this week is still a bit chilly in Denver, Colorado, I settled for making an indoor Spring meal; Spring Pasta. If you aren’t one for any of the vegetables in this pasta, you definitely can take them out. You can also add less vegetables if you want more pasta. We love vegetables in…

Home Furnishing & Decor: Where to Buy

Decorating and furnishing a home is one large beast. Not only is it a large beast, but an expensive one at that. Super expensive if you ask me. As you know my husband and I moved out of our town home last year, lived with friends 2 months and then moved into our now house in the burbs. We went from a little over 1000 square foot town home to our now over 4000 square foot house. Sounds like a problem to have now doesn’t it? Some of you may say, why are you complaining, that isn’t a problem. I am not complaining. I am only trying to give you…

    30 Relatable Greys Anatomy Quotes

It’s crazy to think we are on season 15 of Grey’s Anatomy. I remember when it first came out in 2005 and I was in high school. It was love at first site. Wait, is that weird? Well it gets the point across that I loved the show from the first episode on. I never imagined it would go on this long, but I am so happy it continues. For some reason Grey’s Anatomy resonates with my life. No, I am not a surgeon or doctor or even nurse for that matter, but the show resonates with me. It’s extremely relatable and as I got thinking about it, it’s because…

    Tequila Cucumber Blackberry Smash

We had a taste of warmer weather a couple weeks ago in Denver and it got me dreaming of warm Spring and Summer days sitting on the patio, unwinding in the evening with my husband, cocktail and a delicious dinner on the grill. It also got me thinking of cocktail pairings for the warmer weather. This Tequila Cucumber Blackberry Smash is the perfect Spring drink, and even though the calendar doesn’t say Spring, Spring fever is in the air. While I love Fall and Winter, and they are my favorites, I do tend to get sick of the winter weather and crave that moderately warm temperature. I absolutely hate the…

I can’t believe it’s Valentines day tomorrow. Can you? Time has already been flying by this year. I just don’t understand where it goes. I remember when I was younger saying to my Dad, “I wish I were older,” or “I wish it was already (fill in the date),” my Dad always said to me, “Jessica, don’t wish your life away, time already goes too fast.” Boy oh boy was he right.
